The road out, and the road back.

I came home to Karnal from Hamburg. What stayed with me wasn't the weather — it was the bakery at the end of my street: the same few things, made the same careful way, every morning for decades. Nobody in there was ever in a hurry.

Twenty years of building things had taught me how to run a process. That bakery taught me what a process is for.

I came home to Karnal to build one thing of my own. Not a German bakery in India — an Indian bakery with a German habit: measure everything, rush nothing, and put on the label exactly what went into the bowl.

The 44 is the highway that runs past this town. It's the road I took out, and the road I came back on.

Runs the numbers and the standard. Every price, every purchase and every batch that leaves the kitchen goes past her first. If a cookie does not pass the taste panel at home, it does not reach a jar.

The method came from a bakery in Europe. The grain grows an hour from this kitchen. Nothing else was borrowed.

No refined flour. Whole grain or nothing.

No refined oil. Desi ghee only.

No refined sugar. Jaggery, and not much of it.
